Maple Bacon Donuts!

Well, I’m finally home after being in India (without a kitchen!) for 3 months.  Why not make something over the top to reacquaint myself with my kitchen?

I’ve been aware of this whole bacon and maple craze for awhile now.  I finally decided to try my hand at a gluten-free and vegan version of a maple and bacon donut and the results were pretty delicious.

For the donuts, I used this recipe from the Gluten-Free Goddess.  For the bacon, I used this recipe which combines coconut flakes with maple, soy sauce and liquid smoke.  For the icing, I mixed together 5 tablespoons of maple syrup, 4 tablespoons of Earth Balance and 2 cups of powdered sugar.

Vegan Bake-Off

When? This Saturday, February 5th from 2:30-4

I’m entering the Vegan Bake-Off! The Vegan Bake-off is an annual event, hosted by the Toronto Vegetarian Association. I made a delicious gluten-free treat, and I’ve heard there will be two gluten-free categories this year! I believe there is also a raw category, so hopefully there will be many gluten-free goodies to sample! Sample plates are about 3 bucks for about 5 samples, so come out and get sampling!

Cookies!

Thanks to Greg for making up these treats! He decided to double the chocolate chips, which is always a great idea. The cookies are made with oat flour, something I haven’t really used much, but should start using more often. The oats made these cookies chewy and not crumbly, like gluten-free cookies can sometimes be.

So far, this is the only recipe I/Greg has made from one of my newest cookbooks, “Welcoming Kitchen: 200 Delicious Allergen & Gluten-Free Vegan Recipes. I honestly haven’t had a chance to look through many of the recipes yet. However, if the cookies are any indication as to how delicious the rest of the recipes are, this book is sure to be a winner!
