If you have never made sushi before, I challenge you! It is pretty easy once you get the process down. In terms of specialty items, I use a rolling mat made to roll sushi (although you could try saran wrap or a silicone baking sheet?), rice vinegar, toasted nori sheets and sushi rice (although i bet you could use any rice that was a bit sticky). I made cucumber, carrot and orange pepper rolls. You could get more creative and add tempeh, tofu, avocado, daikon and/or sesame seeds. The possibilities are endless!
