I had a craving for an Urban Herbivore salad, so I decided to make something similar on my own!
I had a bowl with spring mix lettuce, roasted red peppers, chickpeas, sunflower seeds, grated carrots, roasted cauliflower, cucumbers, mushrooms and tomatoes.
My dressing consisted of:
1 package of soft tofu
1/4 c of hemp oil (could use flax or another oil)
1/4 c lemon juice
1/4 c apple cider vinegar
1 handful of parsley and 1 handful of cilantro, stems and all. This was probably about a cup of each?
1 clove of minced garlic
1 t salt
1 t ground cumin
1/8 t cayenne pepper, or to taste
I blended it all together in my blender until smooth.
