I stopped by the Byward Market and picked up a gigantic eggplant for only $1. I decided to make baba ghanoush, because I knew I could eat a lot of it!
I don’t have a recipe for it, as the size of eggplants can vary so much so I always go by taste. Basically, I roasted the eggplant for 45 minutes or so and let it cool. Then I scraped the eggplant into my food processor and added tahini, garlic, lemon juice and some pepper.
Now I have about 4 cups of it, haha.
