Vegan Fudgesicles

Fudgesicle!

This weekend is supposed to be hot here in Ottawa.  Up to 40 with the humidex.  Ugh.  I recently bought some popsicle molds to relive my childhood and decided to make my own fudgesicles.  At least it will give me temporary relief from the heat.  Now these aren’t *exactly* like my childhood favourite, but pretty good considering they are sugar free!

Ingredients:

* 1 package of silken tofu

* 1-2 tsp of vanilla

* 1/4 c cocoa powder

* 1/2 c of milk (i used unsweetened rice, but coconut milk would be awesome in this recipe)

* 15 drops of liquid stevia, or to taste (could also replace with another sweetener)

Directions:

Blend all ingredients in a food processor or blender until smooth.  Fill popsicle molds and freeze until firm.
